Adam ‘Wal’ Roffey

Adam earned his international-standard Chef’s Apprenticeship ticket in Australia in 1997. Since then he has spent just about every day of his life in Indonesia, chasing waves and the lifestyle that goes with it. Wal surfed the archipelago’s eastern islands right through to the Mentawais, Nias and Telo group from 1997 through 2000. In 2000, he operated a surf charter vessel based in Bali, running trips to Lemongan, Lombok and the Sumbawa group. In 2001, he signed on as chef aboard the Mangalui Ndulu in Sumatran waters. Eight years, a million barrels, and as many good times later, Wal knows Sumatra as well as anyone. Wal wrote a monthly segment in Tracks magazine entitled, appropriately enough, “Wal’s Kitchen”.
